Every October 20–30, before the rest of the world’s olives are ready, our family harvests Koroneiki olives from the rocky semi-mountainous terroir of Pappoulia, Pylos, in southern Messinia. At this precise moment of early unripeness, the fruit is at its absolute peak of polyphenol concentration — the natural compounds that Hippocrates himself described as medicinal over 2,000 years ago.
