What a Kalamata Olive Should Taste Like
Not all Kalamata olives are created equal. The name belongs to a specific variety grown in a specific place — and that place is here.
Our Kalamata olives are handpicked October 20 – November 10 from certified Kalamata groves, selected one by one to avoid any damage to the fruit. They then spend two months in a traditional brine — water, salt, vinegar, and infused herbs — with the brine constantly refreshed to develop a clean, complex, deeply savoury flavour.
The final step: a pour of our own extra virgin olive oil to finish and preserve.
